When we say “cheese” these days, we are more often asking for a specialty cheese. The National Ag Statistics Service says specialty cheeses now account for 22-percent of Wisconsin’s cheese output.

Across the state, 93 of Wisconsin’s 126 cheese plants produced 640-million pounds of specialty cheeses last year. The biggest increase statewide was in the production of Limburger cheese.
